Известен способ получения желейного мармелада [1] заключающийся в том, что в воду, используемую для набухания агароида, вносят поваренную соль в количестве, обеспечивающем ее концентрацию в воде, равную 1-1,5% соотношение агароида и воды выбирают равным 1 20oC25, набухание осуществляют в течение 1-1,5 ч. при постоянном перемешивании, а при приготовлении агароидо-сахаро-паточного сиропа поваренную соль добавляют в количестве 0,2 - 0,25% от массы мармелада.There is a method of producing jelly marmalade [1] consisting in the fact that in the water used to swell the agaroid, table salt is added in an amount ensuring its concentration in water equal to 1-1.5%; the ratio of agaroid and water is chosen equal to 1 20 o C25 , the swelling is carried out for 1-1.5 hours with constant stirring, and in the preparation of agaroid-sugar-syrup-syrup syrup is added in an amount of 0.2 - 0.25% by weight of marmalade.

Затем в полученный раствор добавляют повторно 64-65% воды от веса первоначальной смеси и снова перемешивают. Пектино-сахарный раствор процеживают и, перемешивая, выдерживают в течение 4 8 ч. для набухания пектина. В приготовленный раствор добавляют 40 45%-ый раствор лактата натрия из расчета его конечной концентрации 0,5 0,7% к сухому веществу мармелада, затем прибавляют оставшееся количество сахара, патоку, краситель и лимонную кислоту (в виде раствора).
