Claims (23)
1. Способ приготовления ферментированного молочного продукта, включающий следующие стадии:
i) предоставление смеси, включающей:
a) молоко
b) по меньшей мере один вид бактерий, включающий по меньшей мере один вид Bifidobacteria, выбираемый из группы, состоящей из Bifidobacterium animalis subsp. animalis и Bifidobacterium breve,
c) соединение марганца
i) ферментация указанной смеси для предоставления ферментированного молочного продукта.
2. Способ по п. 1, где количество соединения марганца в этой смеси i) находится между приблизительно 1 и 100 мг/л.
3. Способ по п. 1, где соединение марганца представляет собой марганцевую соль.
4. Способ по п. 3, где марганцевую соль выбирают из группы, состоящей из MnCl2 и MnSO4.
5. Способ по любому из предшествующих пунктов, где количество Bifidobacterium в указанной смеси i) составляет 106 -108 кое/г.
6. Продукт, получаемый при помощи способа по любому из предшествующих пунктов.
7. Продукт по п. 6, где указанный продукт включает по меньшей мере 106 кое/г Bifidobacteria.
8. Применение соединения марганца в культуре Bifidobacterium animalis subsp. animalis и/или Bifidobacterium breve.
9. Инокулят для приготовления ферментированных молочных продуктов, включающий
i) по меньшей мере один вид бактерий, включающий по меньшей мере один вид Bifidobacteria, выбираемый из группы, состоящей из Bifidobacterium animalis subsp. animalis и Bifidobacterium breve, и
ii) соединение марганца,
где i) и ii) предоставлены в форме смеси или в виде составного набора.
10. Инокулят по п. 9, где инокулят или его бактерии находятся в свежей, замороженной или лиофилизированной форме.
11. Инокулят по п. 10, где соединение марганца представляет собой марганцевую соль.
12. Инокулят по п. 11, где марганцевую соль выбирают из группы, состоящей из MnCl2 и MnSO4.
13. Способ по любому из пп. 1-5, продукт по п. 6 или 7 или инокулят по любому из пп. 9-12, где смесь или инокулят дополнительно включает цистеин и/или дрожжевой экстракт.
14. Способ по любому из пп. 1-5, продукт по п. 6 или 7, применение по п.8 или инокулят по любому из пп. 9-12, где по меньшей мере один вид бактерий дополнительно включает Lactobacillus bulgaricus и/или Streptococcus thermophilus.
15. Способ по любому из пп. 1-5, продукт по п. 6 или 7, применение по п.8 или инокулят по любому из пп. 9-12, где указанные Bifidobacteria представляют собой Bifidobacterium animalis subsp. animalis штамм CNCM I-4602 и/или Bifidobacterium Breve штамм CNCM I-4321.
