Abstract
1. Способ получения биопродукта комбинированного состава на основе экстракта растительного сырья, предусматривающий раздельное замачивание - соевых бобов в электрохимически активированной воде при pH 7,5-8,5, а зерновых круп - в питьевой воде, приготовление экстракта из смеси предварительно подготовленных соевых бобов/зерновых круп/отрубей в соотношении 90÷50/10÷50/0÷40, добавление в экстракт сывороточного белка, введение стандартной йогуртной закваски, сквашивание при температуре 32-45°C в течение 5-8 ч до получения целевого продукта, внесение рецептурных компонентов, повышающих его пищевую ценность и органолептические свойства.2. Способ по п.1, отличающийся тем, что в качестве зерновой крупы можно использовать овсяную, гречневую, пшенную, рисовую крупы.3. Способ по п.2, отличающийся тем, что в биопродукт в качестве рецептурных компонентов вносят кусочки свежих фруктов и/или овощей, фруктовые пюре, сублимированные кусочки и/или порошки фруктов, овощей, пряностей.4. Способ по п.3, отличающийся тем, что в полученный биопродукт в качестве рецептурных компонентов вносят 0,1-0,9 мас.% пектина, 0-4 мас.% фруктозы.5. Способ по п.4, отличающийся тем, что в полученный биопродукт вносят витамины, минеральные вещества или витаминно-минеральные премиксы.1.
