Способ получения белкового гидролизата, включающий отбор сырья, предварительный гидролиз горячей водой, декантацию жидкой фазы, гомогенизию и сушку, отличающийся тем, что в качестве сырья используют свиную шкурку или спилки крупного рогатого скота, после гидролиза горячей водой проводят гидролиз гидроксидом натрия концентрацией 0,03-0,5% при температуре 95-100°C и гидромодуле 1:(2-3) в течение 3-4 ч, после декантации жидкой фазы проводят отделение жира центрифугированием, гомогенизацию проводят с дальнейшим соединением фугата и продолжают гидролиз в течение 1-1,5 ч с последующей нейтрализацией соляной кислотой до pH=6,5-7,0.
