Abstract
1. Способ получения белковых гидролизатов из биомассы дрожжей путем ферментативного гидролиза, отличающийся тем, что гидролиз проводят в одну стадию, используя в качестве ферментного препарата - панкреатин крупного рогатого скота сухой, который вносят в емкости из расчета (0,14±0,015) г на один литр гомогенной суспензии дрожжей, при этом полученную смесь тщательно перемешивают, инкубируют при 45°С, осуществляют контроль и коррекцию рН до (8,3±0,2) путем введения 20%-ного раствора гидроокиси натрия, а завершают при достижении значения показателя аминного азота не ниже 2,2%, при отсутствии дальнейшего его нарастания в течение последующих шести часов, после этого гидролизат осветляют при температуре (2-25)°С, надосадочную жидкость декантируют, проводят консервацию, разливают в емкости и хранят при температуре (2-25)°С в течение двух лет. ! 2. Способ по п.1, отличающийся тем, что гомогенную суспензию получают путем измельчения прессованных хлебопекарных дрожжей, которые вносят в прогретые до 45°С емкости и добавляют очищенную подогретую до (45±1)°С воду из расчета (4:1) частей воды к дрожжам с последующим перемешиванием, при этом к полученной суспензии добавляют хлороформ в соотношении (100:1), перемешивают содержимое емкости и устанавливают значение рН (8,3±0,2). ! 3.
