Invenția se refera la obținerea unor produse alimentare de tip iaurt functionalizat cu polifenoli din orez negru. Domeniul de aplicare al invenției este industria alimentara, respectiv industria de prelucrare a laptelui, pentru obținerea de iaurturi functionalizate, destinate alimentației umane.The invention refers to obtaining yogurt-type food products functionalized with polyphenols from black rice. The field of application of the invention is the food industry, respectively the milk processing industry, for obtaining functionalized yogurts, intended for human consumption.
Dintre toate cerealale utilizate in dieta umana, orezul negru se diferențiază net datorita conținutului ridicat de proteine, vitamine (vitamina B, riboflavină și niacină), minerale si compuși polifenolici. El este cunoscut sub diferite denumiri: orez violet, orez “interzis”, orez “paradis”, orez imperial, orez “prețios”, fiind considerat un panaceu pentru bolile digestive datorită efectului său curativ. Acesta este considerat in prezent unul dintre cele mai utilizate cereale pentru obținerea alimentelor funcționale, datorită conținutului mare de compuși polifenolici din clasa antocianilor. Antocianii din orezul negru sunt responsabili de efectele biologice ale alimentelor funcționale care il conțin, datorită activității lor antioxidante, hipoglicemiante, anticancerigene și antiinflamatoare. Antioxidantii prezenti in orezul negru pot preveni apariția bolilor proliferative cronice, a arteriosclerozei și cancerului si a proceselor inflamatorii. Aceștia favorizează circulația sângelui, încetinesc deteriorarea și îmbătrânirea țesuturilor, reduc nivelul de colesterol și nivelul zahărului din sânge, inhibă secreția de acid gastric și agregarea trombocitară. “Among all cereals used in the human diet, black rice stands out clearly due to its high content of proteins, vitamins (vitamin B, riboflavin and niacin), minerals and polyphenolic compounds. They promote blood circulation, slow tissue damage and aging, reduce cholesterol and blood sugar levels, inhibit gastric acid secretion and platelet aggregation. "
In ceea ce privește obținerea de iaurturi functionalizate, brevetul EP1516537B1 si respectiv brevetul US7172777B2 prezintă obținerea unui prepat sub forma de pulbere, destinat obțineri de iaurturi, care conține culturi probiotice si agenti ce promovează dilatarea capilarelor si absorbția componentelor active la nivelul sistemului digestiv. Compania Bright Dairy& food Co Ltd in brevetul CN104957255B prezintă un iaurt probiotic ce conține 1010 UFC (unitati formatoare de colonii) obtinut din lapte, lapte praf, smantana, substanțe dulci, prebiotice (0,51,3)% si un agent de fermentare probiotic (0,01-0,1)%. Mașter Supplements Inc. in brevetul US 88891119B2 propune utlizarea de enzime si prebiotice pentru imbunatatirea eficientei probiotice a produselor obținute din lapte. Formularea prebiotica propusa conține izomalto-oligozaharide si α-galactozidaza pentru imbunatatirea creșterii lactobacililor si respectiv izo-maltooligozaharide si β gluconaza pentru imbunatatirea creșterii bifidobacteriilor. Jiva Pharma Inc, in brevetul US9808497B2 propune, printre altele, adaugarea in iaurt a unei formulări pe baza de prune si prebiotice concentrate, produsul obtinut avand proprietăți laxative. Formularea propusa conține, printre altele, un concentrat de prune, oligozaharide prebiotice, îndulcitori, antioxidant!, polietilen glicol (PEG 3350), lemn dulce, cacao, gelatina, vitamine liposolubile, aminoacizi, maltodextrina, cofeina. Aplicația de brevet RU2017120752A / RU2734461C2 propune un iaurt functionalizat obtinut din lapte, faina de ovăz ce conține 1,3-1,4 pD-glucan si culturi de microorganisme liofilizate de tip Lactobacillus acidophilus, Bifidobacterium BB12, Streptococcus termophilus si Lactobacillus delbruecki subspecia bulgaricum. Dezavantajele brevetelor prezentate constau in utilizarea unor compuși artificiali in formulările de iaurt realizate (îndulcitori; PEG 3350; enzime, vitamine liposolubile) si respectiv in obținerea unor iaurturi avand caracteristici organoleptice modificate (iaurturi colorate in nuanțe brune). Problema tehnica pe care o rezolva invenția consta in formularea de iaurturi functionalizate cu polifenoli din cereale, obținute din ingrediente naturale: orez negru, lapte si policulturi de microorganisme probiotice de tip Lactobacillus acidophilus, Bifidobocaterium bifidum ssp. animalis, Streptococcus salivarius ssp. termophilus și Lactobacillus delbruecki ssp bulgaricus.The disadvantages of the presented patents consist in the use of artificial compounds in the yogurt formulations made (sweeteners; PEG 3350; enzymes, fat-soluble vitamins) and respectively in obtaining yogurts with modified organoleptic characteristics (yogurts colored in brown shades). The technical problem that the invention solves consists in the formulation of yogurts functionalized with cereal polyphenols, obtained from natural ingredients: black rice, milk and polycultures of probiotic microorganisms of the type Lactobacillus acidophilus, Bifidobocaterium bifidum ssp. animalis, Streptococcus salivarius ssp. thermophilus and Lactobacillus delbruecki ssp bulgaricus.
Culturile de bacterii lactice utilizate in experimentări au fost reprezentate de culturi comerciale produse și comercializate de compania daneză CHRISTIAN HANSEN. S-a utilizat cultura termofila ABY3, care reprezintă o policultură formată din Lactobacillus acidophilus (LA-5®), Bifidobocaterium bifidum ssp. animalis (BB12®), Streptococcus salivarius ssp. termophilus și Lactobacillus delbruecki ssp bulgaricus.The cultures of lactic acid bacteria used in the experiments were represented by commercial cultures produced and marketed by the Danish company CHRISTIAN HANSEN. Avantajul noilor sortimente de iaurt consta in aceea ca acestea conțin microorganisme probiotice vii (6,9x10e+7,2x106)/g, si sunt ușor de introdus in tehnologiile curente de iaurt. Pentru obținerea a 1L iaurt functionalizat cu polifenoli se parcurg următoarele etapeTo obtain 1L of functionalized yogurt with polyphenols, the following steps are taken
- 1L lapte (caracteristici lapte: pH=6,64; continui proteine=3,35%; conținut lipide=0,9%) se încălzește la 90°C și se menține la aceasta temperatura timp 20 de minute;- 1L milk (milk characteristics: pH=6.64; protein content=3.35%; lipid content=0.9%) is heated to 90°C and maintained at this temperature for 20 minutes;
