Abstract

A PRESENTE INVENÇÃO REFERE-SE A UM PROCESSO DE OBTENÇÃO DE EXTRACTOS PEPTÍDICOS DE PROTEÍNAS DO SORO DO LEITE, POR HIDRÓLISE DE UMA OU MAIS PROTEÍNAS OU PÉPTIDOS QUE CONTÊM AS SEQUÊNCIAS DE AMINOÁCIDOS DE PÉPTIDOS BIOACTIVOS, UTILIZANDO, PARA ESSE EFEITO, ENZIMAS PROTEOLÍTICAS, EM PARTICULAR CARDOSINAS E OUTRAS ENZIMAS SIMILARES PRODUZIDAS POR ESPÉCIES DE CYNARA. ALTERNATIVAMENTE, OS PÉPTIDOS PODEM OBTER-SE POR SÍNTESE QUÍMICA OU POR PROCESSOS ENZIMÁTICOS E/OU FERMENTATIVOS. O PROCESSO COBERTO PELA PRESENTE INVENÇÃO PERMITE OBTER CONCENTRADOS PROTEICOS E PEPTÍDICOS COM BAIXO TEOR EM LACTOSE E SAIS, QUE APRESENTAM ACTIVIDADES BIOLÓGICAS ÚTEIS PARA A FORMULAÇÃO DE PRODUTOS NAS INDÚSTRIA ALIMENTAR E FARMACÊUTICA. ASSIM, OS HIDROLISADOS, E AS SUAS FRACÇÕES OU PÉPTIDOS RESULTANTES DESTE PROCESSO, PODEM SER UTILIZADOS EM PRODUTOS ALIMENTARES, ACTUANDO COMO CONSERVANTES DOS MESMOS, OU ENTÃO, APÓS A SUA INGESTÃO, REFORÇANDO AS DEFESAS NATURAIS DO ORGANISMO.
