Abstract
Pieczywo zawierające mieszaninę co najmniej jednego rodzaju mąki, drożdże piekarskie oraz dodatki w postaci soli, korzystnie jodowanej i wody charakteryzuje się tym, że do składników pieczywa dodany jest dodatek mąki lub płatków z suszu liści kapusty pekińskiej o wilgotności 6% - 8%, najkorzystniej 8% w ilości do 10% w stosunku do naważki mąki w recepturze ciasta z jasnej chlebowej mąki pszennej, żytniej i mieszanej pszenno-żytniej.
