Abstract

Przedmiotem zgłoszenia jest sposób wytwarzania wegetariańskich i wegańskich analogów produktów mięsnych z zastosowaniem emulsji wodno-tłuszczowej oraz z zastosowaniem hydrokoloidu w postaci karagenu, który charakteryzuje się tym, że przed zmieszaniem składników emulsji dodawany jest do nich karagen kappa półrafinowany poddany wcześniej rozpuszczeniu w temperaturze 20°C — 25°C i ogrzaniu w roztworze wodnym, suszeniu oraz sproszkowaniu.
