Boczniak np. ostrygowaty (Pleurotus ostreatus) jest gatunkiem grzybów należących do rodziny boczniakowatych. Pozycja w klasyfikacji Index Fungorum: Pleurotus, Pleurotaceae, Agaricales, Agaricomycetidae, Agaricomycetes, Agaricomycotina, Basidiomycota, Fungi. Takson ten został zidentyfikowany w 1774 r. przez Jacquina, który nadal mu nazwę Agaricus ostreatus. Obecną, uznaną przez Index Fungorum nazwę nadał mu w 1871 r. P. Kummer, przenosząc go do r odzaju Pleurotus. Owocniki dostarczają łatwo przyswajalnego białka, kwasu foliowego, aminokwasów, witamin z grupy B i soli mineralnych; wykryto w nich także obecność lowastatyny obniżającej poziom cholesterolu we krwi. Zawiera pleuran - substancję o działaniu immunostymulującym i przeciwnowotworowym. Występujący w boczniakach aminokwas ergothioneine (ET) - działa antyzapalnie i jako antyoksydant. W trakcie prób kulinarnych prowadzonych przez wnioskodawcę odkryte zostały znaczne różnice we właściwościach kapelusza i trzonka boczniaka. Te pierwsze po obróbce cieplnej stają się miękkie, natomiast trzonki pozostają jędrne. Wytworzone z nich produkty spożywcze, których użyto do imitowania tkanki mięsnej, pozostały sprężyste, zachowały teksturę właściwą dla wyrobów mięsnych. Następnie na podstawie badań fizykochemicznych nr 16745/2018, przeprowadzonych przez Laboratorium Badawcze firmy Intertek Poland Sp. z o. o. w dn. 7.01.2019 r., okazało się, że trzonki zawierają znacznie więcej błonnika niż kapelusz (i mniej białka). Przede wszystkim boczniaki ostrygowate są surowcem rolnym dostępnym lokalnie - niemal w każdej strefie klimatycznej. Po drugie są surowcem pochodzenia naturalnego.
