Abstract

The present utility model relates to a process for making black cowpea ice cream comprising the following steps: chilling 38.84 pcnt all-purpose cream for 24 hours at a temperature of at least 2-8 degree Celsius; whipping all-purpose cream in a mixing vessel till stiff peaks form with an electric beater; folding in 23.77 pcnt condensed milk, 37. 29 pcnt black cowpea paste, and 0.10 pcnt salt in the whipped all-purpose cream; transferring the mixture in step c to a freeze proof container; and freezing for at least 7 hours for at least 0-2 degree Celsius in a freezer.
