Abstract

The present utility model relates to a process for making basil flavored ice cream comprising the steps of: (a) chilling all milk ingredients at a temperature of 4øC overnight; (b) crushing coarsely the freeze dried basil leaves; (c) whipping the all purpose cream using an electric mixer; (d) adding alternately the condensed milk and fresh milk into the whipped cream; (e) folding-in the crushed freeze-dried basil leaves; (f) packing of the mixture in freezable containers; (g) freezing in at least -l8øC temperature.
