A process of making shrimp nuggets comprising the following steps: washing a plurality of shrimps using freshwater; removing shells and head of the shrimps; removing intestinal tract of said shrimps; washing said shrimp with freshwater twice; draining said shrimp in 2 minutes using a drainer; mincing the shrimps into small pieces; mixing said shrimps with iodized salt, chopped onions, black pepper, cake flour, soy sauce, calamansi juice, all purpose flour, bread crumbs, eggs, and iced water in a bowl; making a batter from said mixture in step (g); frying the battered shrimps using vegetable oil in a pan.
