A formulation for producing Indian oil Sardine sausage comprise the following ingredients: Indian oil sardine, carrageenan, curing salt, ascorbic acid, iodized salt, water, sugar,ground black pepper, paprika, garlic, anisado wine, pineapple juice, soy sauce, MSG, food color, wherein said freshly ground Indian oil sardine meat is 74.3 pcnt of said mixture; said carrageenan is 0.2 pcnt of said mixture; said mixture of curing salt is 0.2 pcnt of said mixture; said ascorbic acid is 0.2 pcnt of said mixture; said iodized salt is 1.0 pcnt of said mixture; said water is 2.6 pcnt of said mixture; said sugar is 15.6 pcnt of the mixture; said ground black pepper is 1.1 pcnt of said mixture; said paprika is 0.4 pcnt of said mixture; said garlic is 1.1 pcnt of said mixture; said anisado wine is 1.1 pcnt of said mixture; pineapple juice is 1.1 pcnt of said mixture; said soy sauce is 1.0 pcnt of said mixture; said MSG is 0.1 pcnt of said mixture; said food color is 0.1 pcnt of said mixture.
