Abstract
A method of preserving mangoes comprising the steps of 1) placing and arranging the mangoes in a low temperature and low humidity dryer with a desiccant; and 2) drying the mangoes at a temperature of about 40øC to about 80øC, a drying period of at least two (2) hours wherein the relative humidity is less than 60 pcnt . This method utilizes a low temperature and low humidity dryer wherein a desiccant such as silica gel, is used to dehumidify the drying air. A dried mango product produced by the said method, is characterized by a vitamin C content of more than 40mg/100g without further exogenous chemical treatment.
