Abstract

A process of producing a fish cracker more particularly to a process of producing fish cracker with powdered fish fins and bones comprising the steps of: collecting of the fish fins and bones; sorting to separate the entrails from the fish fins and bones; washing to sanitize the fish fins and bones; blanching to easily remove the remaining flesh in the fish bones; brining to remove the fishy taste and smell; pressure cooking at 250øC for 70 minutes to achieve a softer texture of the raw material for powdering; 15 air drying at room temperature for 30 minutes; oven drying at 60øC-65øC for 60 minutes; powdering the raw materials using high powered blender to grind the fish fins and bones to achieve a finer powdered form of the raw materials; sifting the powdered fish fins and bones using 100 mesh sifter; mixing 40 grams of powdered fish fins and bones, 50 grams of tapioca flour, 10 grams of all-purpose flour, 50 milliliters of water, 5 grams of baking powder, 20 milliliters of oyster sauce, 15 grams of salt, 5 grams of pepper, 10 grams of garlic powder, and 5 grams of sugar; steaming for 30 minutes; cutting mixture into desired size and shape; and oven drying for 8-10 minutes leaving the oven door open.
