A new extraction process of phenolic compounds and antioxidants from banana, ripe mango, calamansi, squash, ripe pineapple, purple yam, and sweet potato peels is provided. The method involves distilled spirits as a substitute food-compatible solvent of extraction. All three alcoholic beverages (gin, vodka, and tequila) were able to extract phenolic and antioxidant materials from the plant samples. A technology based on the use of edible solvents may be developed for the application of natural antioxidants in small-scale and home- or rural-based food industries.
