Abstract

Esta referido a un metodo de obtencion y desarrollo de una formula para el control microbiologico y la perdida de peso para la palta Hass (Persea Americana Hass) mediante el uso de biopolimeros y aceite esencial presentando efecto de proteccion y ayuda la perdida de peso de la fruta. Esta formula para control microbiologico y control de perdida de peso para palta a base de quitosano comprende una solucion cationica y una solucion anionica, en donde la solucion cationica comprende: a) una gelatina (1% a 4% w/v), b) tween 80 (0.020% a 0.1%), c) un aceite esencial citrico (1.5% a 3.5%), d) agua; y la solucion anionica comprende: e) quitosano (0.5 a 2 % w/v en el anion), f) vinagre blanco de cana (5 a 10% en el anion), g) fenilalanina (0.01% a 0.0061% en el anion), y h) agua. Estas dos soluciones se mezclan por agitacion. El resultado final es aplicado a las paltas mediante aspersion por la poca viscosidad de la formula resultante. De este modo se logra que la palta tenga un recubrimiento para el control microbiologico y el control de perdida de peso.It refers to a method of obtaining and developing a formula for microbiological control and weight loss for the Hass avocado (Persea Americana Hass) through the use of biopolymers and essential oil, presenting a protective effect and helping the weight loss of the fruit. This chitosan-based formula for microbiological control and weight loss control for avocado comprises a cationic solution and an anionic solution, where the cationic solution comprises: a) a gelatin (1% to 4% w/v), b) tween 80 (0.020% to 0.1%), c) a citrus essential oil (1.5% to 3.5%), d) water; and the anionic solution comprises: e) chitosan (0.5 to 2% w/v in the anion), f) white cane vinegar (5 to 10% in the anion), g) phenylalanine (0.01% to 0.0061% in the anion ), and h) water. These two solutions are mixed by stirring. The final result is applied to the avocados by spraying due to the low viscosity of the resulting formula. In this way, it is achieved that the avocado has a coating for microbiological control and weight loss control.
