Abstract
Referido a una composicion anti-escaldante para frutas pomaceas, que comprende: escualeno de origen vegetal, obtenido del aceite de oliva, en un rango de 0,1-99.9% v/v; y un vehiculo apropiado que es un agente emulsificante en un rango de 0,1-99.9%. Dicho agente emulsificante se selecciona de acido oleico, acido graso de palma, ester de sorbitano o un alcohol primario. Dicha composicion es util para la conservacion de frutas pomaceas como manzanas y peras, controlando el escaldado producido por el dano del frio.
