Abstract

Described is a method of separating proteins, including non-denatured enzymes, from a raw liquid milk product. The method comprises: (a) mixing the raw milk product with a precipitating agent selected from ethanol and acetone for a period of time sufficient to form a precipitate, wherein the precipitating agent is present in a precipitating agent/milk volume ratio of at least 4:1 by volume, and (b) recovering the precipitate in the form of a powdered milk product. Also described is a powdered milk product, comprising milk proteins separated from a raw liquid milk product, which contains all of the proteins, including non-denatured enzymes, originally present in the raw liquid milk product.
