The invention relates to a method for killing enterobacteria in food and feed and components thereof.
Contamination of food and its components by bacteria is a major problem in both the food industry and the animal feed industry. Contamination can take place on the finished product, but also on the raw materials for the foodstuffs. The latter is especially a problem when sterilizing conditions do not arise in the processing of raw materials into foodstuffs, as can be the case in particular in the compound feed industry. Contamination of one of the raw materials then leads to contamination of the finished food.
Potentially disease-causing bacteria are, in particular, the enterobacteria. Harmful genera of bacteria include Staphylococcus, Enterococcus, Enterobacter Escherichia, Klebsiella, Bacillus, Salmonella, Yersinia, Pseudomonas, Clostridium, Campylobacter, etc. Salmonella contamination is the main problem.
Contamination occurs with various raw materials for the food industry. This concerns both raw materials of vegetable origin and animal origin. Table I below shows the degree of contamination of a number of raw materials, averaged over different sources in different countries, for illustrative purposes.

Of the methods to combat contamination of food and its components by bacteria, thermal treatment is the most common. Depending on the circumstances such as temperature, moisture content, duration of treatment, this involves sterilization or pasteurization. Heat treatment can take place in the presence of air or under anaerobic conditions. Steam treatment is also used for pasteurizing foodstuffs. Depending on the quality requirements, the degree of contamination and the nature of the disinfection where, temperatures between 70 ° C and 140 ° C are usually applied. A conventional treatment for the disinfection of raw materials for compound feeds takes place for 4 minutes at a temperature of 85 ° C and a moisture content of $ 15. The main drawbacks of the thermal treatment are the high energy consumption and the deterioration of the nutritional value and the taste properties, for instance because proteins are denatured or other sensitive food components are decomposed.
Other methods of combating or preventing contamination by bacteria include gassing the raw material or product, for example with ethylene, ammonia (DD-A-231.281), CFCs (US-A-3,723.i36), ethylene oxide (SU-A -249,566) or carbon dioxide, and adding disinfectants such as antibiotics (e.g. EP-A-292,191). These treatments are generally expensive and / or insufficiently effective. Fumigation has disadvantages from a process-technical and environmental point of view and the addition of antibiotics to feed has objections regarding the development of resistance and the presence of residual contents in slaughtered animals and animal products.
A method has now been found which meets the above drawbacks. The method according to the invention is characterized in that the food or its constituent is kept under a pressure of at most 100 mbar for at least one minute. Surprisingly, it was found that in such a method the bacteria present in the feed component, in particular enterobacteria, more in particular Salmonella, are largely killed.
The method according to the invention has the advantage that it involves much less energy consumption than a thermal treatment. Moreover, this method has little or no influence on the food itself, whereby all valuable components remain intact and no new material is added. Additional advantages are that in this process the odors are largely removed and the moisture content of the product can be regulated as desired.
For example, the temperature at which the process is performed can be selected between about ambient temperature and a temperature at which sterilization occurs due to the thermal effect. It is advantageous to operate between about ambient temperature and about 50 ° C.
It is preferred to operate at such a combination of temperature and pressure that the water vapor pressure is close to the prevailing pressure. A pressure of at most 50 mbar is preferably used. When the process is carried out at ambient temperature, a pressure of 5-30 mbar is most preferably used. The bactericidal activity can be further improved if the pressure drop is allowed to proceed quickly, i.e. the substances to be disinfected are transferred from the ambient pressure to the reduced pressure, for example 25 mbar, in a short time, for example within 1 second.
The time during which the reduced pressure is applied depends on the nature of the food, the degree of contamination and the desired degree of disinfection, and furthermore on the moisture content and other factors. In general, the pressure drop is carried out for at least one minute. Preferably, the reduced pressure is applied for at least 5 minutes.
According to the present invention, foodstuffs and ingredients thereof are understood to mean all goods and raw materials intended for the nutrition of humans or animals. Therefore, the method according to the invention can be used to disinfect finished foodstuffs for humans and animals as well as raw materials of vegetable and animal origin for such foods. In particular, the method according to the invention has advantages for the disinfection of raw materials for compound feeds. Particularly favorable results are obtained with the disinfection of fish meal and meat and bone meal.
Various bacteria can be controlled with the method according to the invention. The method is applicable for killing enterobacteria and related bacteria, examples of which are mentioned in the introduction. In particular, the method is used for killing Salmonella bacteria.
The treatment of the reduced pressure foods and ingredients may, if desired, be combined with other treatments to reduce the bacteria content, for example, a thermal treatment. Thus, with a combination of low pressure and elevated temperature, either the same degree of decontamination as with a conventional heat treatment can be achieved under milder conditions, or better decontamination can be achieved at the same temperatures as with the conventional method.
The invention also relates to an apparatus for carrying out the above-described method, at least comprising a vacuum space, supply and discharge sluices for supply and resp. removal of decontaminated goods, means for controlling the residence time of the goods in the vacuum space and one or more vacuum pumps.
An example of a device useful for the present method is shown in the accompanying figure. The device shown in the figure is particularly suitable for the disinfection of raw materials for compound feed. The raw material is alternately distributed via feed piece 1 between two feed locks 2, which can be brought to a slightly reduced pressure by means of pump 3. These supply sluices are operated alternately to achieve as much continuous process as possible. The raw material then enters the vacuum space 4, which is kept at the reduced working pressure by means of pump 5. The extracted air with moisture and any other components is passed through collection vessel 6 through a double-walled condenser 7. In the vacuum space 4 there are one or more conveyor belts 8 which distribute the raw material throughout the space. If necessary, the vacuum space can be brought to an elevated temperature by means of heating element 9. When the raw material to be treated has been exposed to the reduced pressure long enough, it leaves the vacuum device via outlet sluice 10.
