Abstract
Coherent meat products are made by bonding smaller pieces of meat together. Pieces of raw meat are worked mechanically until an adherent deposit has formed on the meat. An effective amt. of an emulsifier (I) is then added and the mixt. is worked again until the (I) is distributed uniformly over the surface of the meat. The coated metal is then loaded into a container, compressed, and heated to a core temp. of >=60 degrees C. The process gives large coherent pieces of meat made up from smaller pieces. The meat does not fall apart when heated, as is the case e.g. with pieces of meat bound together with a gelatin binder.
