Abstract

An installation for applying a sealing layer of paraffin wax to the surface of a cheese - includes a wax-filled bath, and a conveyor for transporting the cheeses through the molten wax. The conveyor is arranged so that over a section of the track the cheese is only partly submerged, so that material applied to its upper surface and part of its sides has time to harden off. A suction device is then brought into contact with the coated upper surface to lift the cheese out of the bath. The whole surface of the cheese is coated so that mould cannot form anywhere, in contrast to cheeses coated in conventional machines in which certain places are left uncoated.
