THE PRESENT INVENTION PROVIDES A METHOD FOR RECOVERING LIPASE ACTIVITY, THE METHOD INCLUDING A MOISTURE ABSORPTION STEP OF BRINGING A LIPASE-CONTAINING COMPOSITION INTO CONTACT WITH A WET GAS; A METHOD FOR PRODUCING A LIPASE WITH RECOVERED ACTIVITY, THE METHOD INCLUDING THE STEPS OF PREPARING A LIPASE WITH REDUCED ACTIVITY AND RECOVERING THE ACTIVITY OF THE LIPASE WITH REDUCED ACTIVITY BY THE RECOVERY METHOD; AND A METHOD FOR PRODUCING AN ESTER SYNTHESIS PRODUCT, THE METHOD INCLUDING ESTERIFICATION OR TRANSESTERIFICATION USING THE ABOVE LIPASE WITH RECOVERED ACTIVITY.
