Abstract

The present invention relates to the yield of shrimp wastes for obtaining astaxanthin and protein. For this, it was done a lactic fermentation of the residues, then an extraction with a solvents ternary system (petroleum ether: acetone: water) was carried out and the addition of antioxidants (BHA:BHT) in order to decrease the pigments degradation. There were done enzymatic treatments with protease savinaseMR and the celulasa viscozymeMR L for the hydrolisis and disociation of caroteno-proteins, respectively. The hydrolisis of caroteno-proteins using protease was developed in a membrane enzymatic bioreactor, in which it was simultaneously, concentrated the protein fraction by ultra-filtration and the pigments were separated in the permeate, which then was concentrated by inverse osmosis. The carotenoids extraction yields in mg per kilogram of fermented shrimp residue were: 272.2 in the extract with dissolvent, 1140 with protease treatment, 769.7 with celulasa and 907.1 with protease in the membrane enzymatic bioreactor.
