Abstract

La presente invencion describe el uso de glucosa secada por aspersion como agente edulcorante en composiciones de chocolate; la glucosa secada por aspersion se utiliza para reemplazar entre 5 y 100% del agente edulcorante normal, el cual es sacarosa; la glucosa secada por aspersion se utiliza en chocolate obscuro, con leche y blanco; este reemplazo da como resultado un producto que tiene menor viscosidad y que es por lo tanto más fácil de manejar.
