Abstract
The invention describes how thiols, particularly natural thiols, are prepared by bio-conservation placing a cisteine complex S in contact with a microorganism which can be utilized in food, having an enzymatic activity of beta-C-S-lyase type. Utilized microorganisms preferably are yeasts or filamentous fungi. Obtained product can be utilized in edible food, as it is, in a flavoring composition, or as a flavor enhancer.
