Abstract

The present invention discloses a mechanical structure specifically designed for corn precise nixtamalization, which is controlled by means of a mechanical movement with a rotatable reaction chamber free of internal mechanical elements, said chamber being wrapped and heated by a thermal oil first casing which is heated in turn by a second hot air casing, said hot air being produced in a recycling furnace; the mechanical structure is provided with a pressure eliminating system which prevents internal over-pressures from being generated in the equipment; the structure takes maximum advantage of those materials which are subjected to reaction up to precision possibilities by stoicheiometric calculation, it does not produce contaminants of any type, it does not break grains at all, so it does not cause decrease of any kind, it does not detach corn pericarp, thereby allowing a maximum nixtamalization or reaction of 100 percent which results in a perfectly whole nixtamalized grain which allows for a higher nutritive coefficient because it contains all corn natural nutrients, which are profitably used for the production of dough and, ultimately, tortillas.
