Abstract

La presente invención se refiere a una pasta seca en la forma de tortiglione, i.e., conformada como un tubo cilíndrico hueco, que tiene un diámetro exterior de entre 8 y 14 mm y que tiene sobre su superficie exterior una pluralidad de rebordes (1', 1") o salientes orientadas en la forma de una hélice con un ángulo de inclinación de entre 40° y 58°, estas tortiglioni tienen características organolépticas y estructurales, en particular una consistencia o textura, superiores a las de las tortiglioni convencionales que tienen rebordes o salientes orientadas en la forma de una hélice con un ángulo de inclinación de aproximadamente 35º.
