Abstract

The present invention refers to a process that comprises the culture of strains of methylotrophic yeasts for producing and secreting polypeptides with phytase activity to the culture medium, it also comprising the obtention of preparations of polypeptides, as well as the application of these preparations for increasing the bioavailability of phosphorus and nutrients in ingredients rich in phytate. The particularity of the invention is that the process is characterized for producing polypeptides encoded by polynucleotides obtained in a synthetic manner and for performing at highest levels the phytase activity. This invention may particularly provide preparations of polypeptides with phytase activity in a pH interval of from about 2.5 to about 9 and temperature of from about 25°C to about 80°C, high thermal stability, stability to digestive proteases and the application thereof in different industrial applications.
