Abstract

La presente invención se refiere a la modificación al proceso de nixtamalización, que permite disminuir el consumo de energía. La nixtamalización es un proceso que en forma general consiste en la cocción de los granos de maíz en agua adicionada con cal a temperaturas cercanas al punto de ebullición del agua. La modificación propuesta en la presente invención consiste en realizar el proceso de la nixtamalización a una temperatura del agua de 48°C o 65°C, para lo cual opcionalmente se utilizan fuentes de energías alternas como la energía solar.
