Abstract
La presente invención se relaciona con el campo de la tecnología de alimentos. La presente invención proporciona métodos para controlar el crecimiento de listeria al limitar su acceso a manganeso. De manera más específica, la presente invención proporciona un método para inhibir o retrasar el crecimiento de listeria al reducir la concentración de manganeso en un producto alimenticio el cual preferiblemente es un producto lácteo. La invención también proporciona eliminadores de manganeso y usos de los mismos para inhibir o retrasar el crecimiento de listeria.
