Abstract
The present invention relates to a method for obtaining functional tortillas with a high protein and dietary fiber content, higher essential amino acid content values, in vitro protein digestibility, calculated protein efficiency ratio, and better nutraceutical properties than tortillas made with 100% extruded criollo blue corn flour, characterized by the addition of extruded amaranth flour to extruded criollo blue corn flour, which makes it possible to make tortillas with improved nutritional and nutraceutical properties (antihypertensive and hypoglycemic potential) compared to tortillas made with 100% flour blue criollo corn and sensorial acceptable.
