Abstract

La invención proporciona: un agente texturizante y colorante de origen vegetal, comprendiendo el agente un pigmento carotenoide vegetal y una materia vegetal fibrosa que contiene pectina, habiéndose conseguido ambas juntas de la misma materia vegetal inicial, y un antioxidante, en el que la materia vegetal fibrosa que contiene pectina puede dar textura a una composición acuosa, el carotenoide puede dar color a una composición acuosa y el antioxidante está presente en una cantidad eficaz para evitar la degradación de una porción considerable del carotenoide manteniendo de ese modo el color del agente. También se proporcionan métodos de preparación del agente texturizante y colorante y el uso del mismo para texturizar y colorear productos alimenticios, bebida, composiciones de fármacos, nutracéuticos, cosméticos o higiene personal.
