Abstract

The present invention refers to a novel method for obtaining a concentrated suspension of natural alcohol-free vanilla extract that maximizes extraction and minimizes the amount of ethanol required. The said process consists of solid-liquid extraction of vanilla cured in three or four counter-current stages with ethanol-water (60%) as a solvent. The extraction results in an extract of the highest concentration allowed by solubility (about eight grams solids/dm3) with an extraction yield higher than 90%. The extract obtained is evaporated at 50-101.3 kPa to a solids concentration around 36% by weight, which ensures the reduction of trace alcohol concentration. The energy required for evaporation is 0.44 kW-h/kg of extract. The evaporated solvent (with an average composition of 65% alcohol) is recycled to the solvent of the extraction process. The reconstituted vanilla extract concentrate has the same amount of vanillin and the main volatile compounds as the non-evaporated extract.
