Abstract
The present invention aims to provide a carrot meal of great interest and commercial value, due to its high content of phenolic compounds, antioxidants, dietary fiber, and its higher capacity to absorb water and oil, obtained by the application of post-harvest abiotic stress. Said functional carrot flour results in better properties allowing being a vegetable ingredient rich in bioactive compounds that can be incorporated into food and beverages to increase its nutraceutical value.
