Abstract

La presente invención se refiere a un polvo de leche que comprende caseínas y proteínas de suero de leche en donde el polvo después de la reconstitución en un medio acuoso comprende agregados de caseína-proteínas de suero de leche/grasa que tienen un valor de diámetro medio Dv50 de al menos 1 µm según la medición por difracción láser. La invención se refiere, además, a un procedimiento para preparar un polvo de leche que incluye las etapas de proporcionar un concentrado de leche líquida a T<25 °C, ajustar el pH entre 5.7-6.4, calentar a 80-150 °C durante 3-300 s, enfriar por debajo 70 °C y, opcionalmente, reajustar el pH entre 6.5-6.8, secar la composición y el polvo de leche obtenido por este proceso para producir leches de crecimiento, salsas culinarias, mezclas de café, crema para el té y el café o bebidas de cacao-malta.
