Abstract

The invention relates to the method of preparation of macaroni wares particularly lone macaroni. The aim of the invention is shortening the time of preparation and improvement of macaroni quality. The aim is achieved by pastry mould through the head of the press, hanging up the received wares on bars and neating and drying them by the thermal agent in several climatic zone, heating and drying in the first climatic zone is made during 10-60 min. up to the temperature of 80-100°C at the relative humidity of 60-80% with the temperature stepped raising by 4-12°C in each next step in comparison with the previous, and in the second climatic zone the relative humidity is fixed equal to 65-85%.
