Abstract

The invention relates to the wine industry, namely to a process for the increase of active acidity of dry wines.The process, according to the invention, provides for the electrolysis of wine at a ratio of electrodes current density of at least 100:1, at the same time the electrode with a higher current density is used as cathode, for the space of a time interval T, then the electrolysis is carried out with the opposite polarity of electrodes for the space of a time interval of at most 0.01T.
