Abstract

The invention relates to the food industry, namely to the electroplasmolysis of vegetal raw material.The process for electroplasmolysis of vegetal raw material provides for the flow electroplasmolysis of vegetal raw material in the plasmolysis chamber, wherein the chopped vegetal raw material is fed in continuous flow through a pipe-line connected to the electroplasmolysis apparatus, the flow velocity of the raw material at the inlet into the plasmolysis chamber is equal to the velocity of outlet therefrom and constitutes 0,55...0,95 from the flow velocity in the pipe-line, and the flow velocity in the plasmolysis chamber is equal to the flow velocity in the pipe-line.The apparatus for electroplasmolysis of vegetal raw material for realization of the claimed process includes an isolated cylindrical body (1), inside which along the longitudinal axis there are installed electrodes (9), connected to a supply source, forming a plasmolysis chamber (8), onto the ends of the body by means of flanges (2, 3) there are mounted reducers (4, 5) in the form of truncated cone, connected to the raw material displacement pipe-line, the diameter of the small base of the reducers being equal to the diameter of the pipe-line, and the diameter of the great base is determined from the relation:provided thatS1 - the working section of the plasmolysis chamber,S3 - the inner cross-section of the cylindrical body,S2 - the total transversal surface of electrodes in the plasmolysis chamber,Scond. - the transversal surface of the raw material displacement pipe-line,π = 3,1415,and the length of reducers is equal toThe result consists in increasing the efficiency of the electroplasmolysis process.
