Abstract

The invention relates to wine industry, namely to a method for determining the age of wine distillates.The method, according to the invention, provides for the physical and chemical analysis of the distillate with the quantification of ethyl acetate (X1), lignin (X2), 5-hydroxy-methylfurfurol (X4), gallic (X3), vanillic (X5), syringic (X6) and ellagic (X9) acids, vanillin (X7) and syringic (X8), sinapic (Csin.al.) and coniferyl (Ccon.al.) aldehydes by the method of high-efficiency liquid chromatography, as well as the determination by the spectrophotometric method of optical density (X13) and color intensity (X14), calculation of the index (X12) for the determination of the approximate age and of the refined age of the distillate (Y, years) using respectively the formulae:andY = 0.10618 - 0.00109 X1 + 4.54863 X2 + 0.95093 X3 + 0.25429 X4 - 1.56236 X5+ 1.37151 X6 - 1.11535 X7 + 0.28456 X8 + 0.07181 X9 - 0.62412 X10 - 2.02767 X11 + 0.34479 X12 + 0.00049 X13 + 0.45171 X14,at the same time, for values of the index X12 of 1.9...2.1 the approximate age of the wine distillate is 4…5 years, for values of 2.3…2.7- 6…8 years, and for values of 1.3…1.6 - over 10 years.
