Abstract

The invention refers to agriculture, namely to a process for fresh tomatoes storage.The process, according to the invention, includes cooling of tomatoes up to the temperature of 12,5°C, packing thereof into a package consisting of two packs between which there is a free space, at the same time the external pack is impermeable for gases and water, and the internal one is semi permeable for CO2, air removal from the package and administration therein at the atmospheric pressure of O2 and CO2 in the quantity of 4% and, correspondingly, 3% of the internal pack's volume, hermetic sealing of the package and storage of tomatoes at the temperature of 12…13°C and constant concentration of CO2 with passage of CO2, exceeding the quantity of 3% from the internal pack's volume, into the space between the packs. Storage of tomatoes is carried out in reservoirs with water.The result consists in increasing the storage life of the fresh tomatoes.
