Abstract

Inventia se refera la industria alimentara, in special la o compozitie si un procedeu de fabricare a nectarului cu proprietati functionale de caracter diabetic. Nectarul contine urmatoarele componente, in % de masa: piure de fructe 45...55; sirop din extract apos de stevie, cu continutul masic de glicozide de 0,07...0,10%, 45...55. Pentru pregatirea nectarului se foloseste piure avand urmatoarea corelatie: gutui si piersice 60:40 sau mere si gutui 70:30, sau mere si prune 60:40. Procedeul de obtinere a nectarului include pregatirea piureului, prepararea siropului, amestecarea piureului cu siropul, incalzirea cu amestecarea continua, ambalarea in recipiente, inchiderea si sterilizarea. Siropul, cu continutul masic de glicozide de 0,07...0,10%, se pregateste din extract apos de stevie, se fierbe 3...5 min si se filtreaza. Rezultatul inventiei consta in obtinerea produsului cu proprietati functionale de caracter diabetic, imbogatit cu aminoacizi, vitamine, polifenoli si elemente minerale.ŕ
