Abstract

The invention relates to the microbiological synthesis of substances, to the method of obtaining of fructosyldisaccharide useful as saccharous substances in food industry, especially known as TGF.The obtained fructosyldisaccharides represent an intermediar product for using in the process of obtaining sucralose (known as TGF).The purpose of the invention consists in increasing the quality of the product with special destination. The method foresees the complying of the reaction of aldose and saccharose or raffinose in the presence of fructosyltransferase produced by Bacillus subtilis NCIB nr. 11871, 11872 or 11873, which posess Km for saccharose at least 0,1 M in the absence of acceptor of aldose, which don't form enormous cantities of levan sedimented of alcohol from the fructose donor in the absence of aldox acceptor stable at the actions of compounds surface-active, which possess an optimal activity at the temperature of 30°C and which activates during at least of 20 minutes at the temperature of 45°.This ferment doesen't manifest invertasing activity, which influences favourable on quality characteristics of product with special destination, and it doesn't accelerate the reaction of incongruousness, doesn't change the oligosaccharides with low molecular weight in levan with big molecular weight.
