Abstract

본 발명은 가공적성이 우수한 육계의 육질개선방법에 관한 것으로, 좀더 상세하게는, 일반 배합사료 99∼99.9중량%와 키토산, 숯가루 및 10메쉬(mesh) 이하의 잔모레로 이루어진 첨가제 0.1∼1중량%를 함유하는 배합사료를 육계에 공급함과 동기에 키토산 수용액을 5 내지 12ppm으로 희석시킨 음수를 음용시켜 가공적성이 우수한 육계의 육질을 개선시키는 방법에 관한 것이다.

가공적성이 우수한 육계의 육질개선방법
본 내용은 요부공개 건이므로 전문내용을 수록하지 않았음
제1도는 본 발명 및 종래의 육계 근육의 사후 경시적인 근 섬유의 소편 화율을 나타낸 그래프이고, 제2도는 본 발명 및 종래의 육계 근육의 사루 경시적인 육질의 물성변화도(전단력)를 나타낸 그래프이다.

Claims (4)

  1. 일반 배합사료 99-99.9중량%와 키토산, 숯가루 및 10메쉬(mesh) 이하의 잔모래로 이루어진 첨가제 0.1-1중량%를 함유하는 배합사료를 육계에 공급함과 동시에 키토산 수용액을 5 내지 12ppm으로 희석시킨 음수를 음용시키는 것을 특징으로 하는 가공적성이 우수한 육계의 육질 개선방법.
  2. 제1항에 있어서, 상기 키토산, 숯가루 및 10메쉬(mesh) 이하의 잔모래가 약 1 : 1 : 1의 무게비로 혼합된 것을 특징으로 하는 가공적성이 우수한 육계의 육질 개선방법.
  3. 제1항에 있어서, 상기 키토산이 수분 10%이하, 회분 1.0%이하, 입자도 50메쉬 이하의 수용성 물질로 탈아세틸화도가 90%이상인 것을 특징으로 하는 가공적성이 우수한 육계의 육질 개선방법.
  4. 제1항에 있어서, 상기 키토산 수용액이 키토산 분말 0.5-2중량%을 빙초산 0.3~1중량%에 녹여서 정제수 97-99중량%를 첨가한 것을 특징으로 하는 가공적성이 우수한 육계의 육질 개선방법.
