Abstract

본 발명은 신규한 유자주스를 제조하기 위한 유자원액 및 신규한 유자주스를 제조하기 위한 유자원액 착즙 방법을 제공함을 목적으로 한다. 신규한 유자주스를 제조하기 위해서는 유자원액이 1.0~3.0 부피%의 오일을 함유하고 0.1 부피% 이하량의 펄프질을 함유하여야 한다. 이러한 함량의 오일 및 펄프질을 함유하는 유자원액을 착즙하기 위해서는 벨트식 착즙법에 의해 유자원액을 착즙하는 것이 적합하다. 이러한 유자주스 원액은 그대로 제품화 할 수 있음은 물로 여기에 물과 기타 필요한 당을 첨가하여 희석 과즙 음료화 할 수도 있다. 희석 과즙 음료를 제조하는 방법은 먼저, 세척에 의해 잔류농약, 이물 및 협잡물을 제거하고, 유자를 착즙, 여과하고, 착즙원액을 저온살균 및 냉각하고, 원액을 희석한 후 필요한 당류를 첨가하여 유자주스를 제조한다.An object of the present invention is to provide a nutrient solution for producing a new citron juice and a nutrient solution for producing a new citron juice.
