Abstract

반응기질인 전분을 호화되지 않는 가능한 범위내에서 열처리 한후, 사이클로덱스트린 글루카노트란스퍼라제 (Cyclodextrin glucanotransferase)를 작용시켜 생성된 혼합액에서 물리적방법으로 미반응전분을 제거, 고함량의 사이클로덱스트린을 생산하는 사이클로덱스트린의 제조방법.

Claims (5)

  1. 사이클로덱스트린을 생산함에 있어 반응기질인 전분을 호화되지 않는 가능한 범위내에서 열처리한후,사이클로덱스트린 글루카노트란스퍼 라제 (Cyclodextrin glucanotransferase)를 작용시켜 생성된 혼합액에서 원심분리, 여과등의 물리적방법으로 미반응전분을 제거, 고함량의 사이클로덱스트린을 생상하는 것을 특징으로 하는 사이클로덱스트린의 제조방법.
  2. 제1항에 있어서, 전분의 열처리 온도가 기질로 선택된 전분의 호화 개신도보다 30℃ 낮은 온도에서 10℃ 높은 온도까지의 범위에서 열처리하는 것을 특징으로하는 사이클로덱스트린의 제조방법.
  3. 제2항에 있어서, 전분의 열처리 온도가 기질로 선택된 전분의 호화개시온도보다 25℃ 낮은 온도에서 호화개시온도까지의 범위에서 열처리하는 것을 특징으로 하는 사이클로덱스트린의 제조방법.
  4. 제1항에 있어서 기질이 입자상을 갖는 변성전분 또는 일반전분인 사이클로덱스트린의 제조방법.
  5. 제1항의 방법에 따라 생성된 사이클로덱스트린.
