Abstract

PURPOSE: To manufacture starch syrup containing cyclodextrin, in high yield, by treating starch with cyclodextrin-synthetase (CD-synthetase) adsorbed to starch.
CONSTITUTION: A starch suspension (pref. potato starch) of a concentration of ≤50% is treated with CD-synthetase supported by starch and the liquefied starch is heated at about 100W130°C for 10W60 minutes in an autoclave. The title starch syrup having excellent water-solubility is prepared by treating the heat-treated syrup with the starch-supported CD-synthetase. The CD-synthetase is pref. the one produced by Bacillus macerans, especially an α-CD-synthetase.
