Abstract
Xanthan gum was produced by culturing white mutant, Xanthomonus compestris UW-3(KFCC 10001) and back mutant, X. compestris UY-12(KFCC10002) induced from X. compestris ATCC 13951 by treating with ultraviolet, in a common medium at 25-30≰C, pH 5.0-8.0, aerobically. The mutants differed from the parent X. compestris in that an organic nitrogen source as amino acids was not a necessary nutrient and produced more 20% than the parent.
