Abstract
Description
The present invention relates to a method for producing rice cakes containing acorns, and more particularly, it contains acorn grains, not acorn starch, so it has excellent taste and texture, and is rich in nutrients such as tannins and aconic acid. , to a method for producing rice cakes containing acorns that provide rice cakes exhibiting excellent anticancer effects.
Mochi is manufactured by steaming glutinous rice or spicy rice flour and other grain flours and then kneading or molding them.
In the case of glutinous rice cake, it is a food prepared by interposing sediment in the outer skin prepared by the process of kneading after steaming glutinous rice or spicy rice flour and other grain flour. and a sediment made by mixing starch, soybean and sesame powder with sugar.
As described above, the sediment is mainly composed of grains, and the outer skin of the sediment is made by kneading and steaming grain powder containing glutinous rice as a main ingredient. Problems such as not being able to sufficiently satisfy the
On the other hand, the acorn grain itself is called 'loss' in oriental medicine, and it is known to be effective against cancer. Among the major constituents of acorns, there is a component called 'aconic acid', which is effective in discharging toxins and waste heavy metals accumulated in the body. It is very helpful in relieving hangover and maintaining liver health.
In addition, 'tannin', which occupies a large portion of acorns, is effective in preventing aging by helping the regeneration of damaged cells by removing free radicals that cause aging. If consumed regularly, it is effective in preventing bleeding gums and in people who frequently bleed nosebleeds. In addition, tannin effectively reduces LDL cholesterol, that is, bad cholesterol in the blood, and potassium component among acorns helps to discharge sodium in blood vessels, which is a great help to blood vessel health.
Also, acorns are well known as a diet food. The calories of acorn grains are 220 kcal per 100 g, but the histone acetyl transfer enzyme is reduced to around 50% due to the rich dietary fiber such as unsaturated fatty acids contained in it, so that fat is absorbed into the body. It suppresses accumulation, and with other nutrients, it removes swelling, maintains healthy blood vessels, improves diabetes, and removes wastes. Therefore, it is effective for dieting, and when it is made with jelly, the calories are 40 to 50 kcal per 100 g, so it is low-calorie, but its nutrition is excellent, and it is attracting attention as a diet food.

The glutinous rice grinding step (S101) is a step of soaking glutinous rice in water and pulverizing it. After washing the glutinous rice, soaking it in water for 12 to 15 hours, and removing the water for 40 to 80 minutes, to a particle size of 2 to 3 millimeters. It is made by pulverizing, more specifically, washing the glutinous rice with purified water 10 times or more until clear water is better, soaking the washed glutinous rice in water for 12 to 15 hours so that it is crushed when pressed by hand, and scooping out the soaked glutinous rice through a sieve It is a step of removing water for 40 to 80 minutes and pulverizing it to a particle size of 2 to 3 millimeters using a dolora.
After the glutinous rice grinding step (S101) consisting of the above process is performed, the degree of mixing with the acorns boiled through the acorn boiling step (S101-1) is improved, thereby providing rice cakes of uniform quality.
The acorn boiling step (S101-1) is a step of soaking and boiling in water after removing the skin of the acorn. After removing the skin of the acorn, it is soaked in water for 20 to 30 hours and boiled for 30 to 40 minutes. More detailed Harvest fresh acorns, soak them in water, remove any floating acorns, wash only the acorns that have submerged in water 3 times, dry them in the sun for 3 days, separate the dried acorns, and prepare for the boiling process. do.
The acorns with their shells separated as described above are soaked in water for 20 to 30 hours, put in a pressure cooker with water soaked to the inside of the acorns, and boiled under high pressure for 30 to 40 minutes. This is the boiling stage.
After the acorn boiling step (S101-1) consisting of the above process, it is easily pulverized in the first mixture grinding step (S103) and is evenly mixed with the glutinous rice pulverized through the glutinous rice grinding step (S101) to show uniform physical properties. can provide
In addition, when acorn grains are used as described above, acorn grains themselves are a warm component, so it is effective for cold people, people with severe swelling, and poor circulation or menstrual pain in women. It can be given the effect of stopping and restoring energy.
In addition, in general, powdering acorns is to extract starch from acorns to make jelly. It is effective to eat jelly with acorn starch sieve, but if you use acorns powdered with starch for rice or other raw materials, the good ingredients of acorns are It is insignificant compared to the amount, so it is impossible to take the nutritional part contained in the grain itself. Therefore, if you use the grains of acorns as they are, but reduce the astringent taste and side effects caused by excessive tannins in the process of cleaning and boiling, and mixing the grains with glutinous rice, the dough itself has a dark brown color and is shiny. It is possible to provide a rice cake with a chewy texture and chewy texture, and a delicious flavor. When acorns are mixed with glutinous rice or other ingredients in the form of grains to make a rice cake, the effects listed above are about 2 compared to using starch powder. double improvement. In addition, acorns have an effect of preventing hardening or spoilage, and thus serve to provide rice cakes with improved preservation without hardening.
The first mixture grinding step (S103) is a step of mixing and pulverizing the acorns and salt boiled through the acorn boiling step (S101-1) with the glutinous rice crushed through the glutinous rice grinding step (S101) and pulverizing the glutinous rice grinding step 30 to 45 parts by weight of acorns boiled through the acorn boiling step (S101-1) and 1 to 1.5 parts by weight of salt are mixed with 100 parts by weight of glutinous rice pulverized through step (S101), and 0.5 to 1.5 milliliters using Dolora It is made by pulverizing to a particle size of meat.
After the first mixture grinding step (S103), the glutinous rice crushed through the glutinous rice grinding step (S101) and the acorns boiled through the acorn boiling step (S101-1) are evenly mixed, and the particle size is high Thus, the steaming effect can be improved in the steaming step.
At this time, when the content of the boiled acorns is less than 30 parts by weight, the effect caused by the acorn component is contained is insignificant, and when the content of the boiled acorns exceeds 45 parts by weight, the content of glutinous rice is relatively reduced too much, and the texture or Preference may be reduced, and the tannins contained in acorns may be excessively contained, which may cause side effects such as diarrhea, abdominal pain and constipation.
The second mixture pulverizing step (S105) is a step of mixing and pulverizing the mixture pulverized through the first mixture pulverizing step (S103), and the first mixture pulverizing step (S103) is contained in the pulverized mixture It is made by mixing 5 to 7 parts by weight of water with respect to 100 parts by weight of the glutinous rice and pulverizing it to a particle size of 0.5 to 1.5 millimeters using a dolora.

It enhances one's immune function, relieves stress, and provides rice cakes that do not deteriorate for a long time.
At this time, the cypress essential oil is prepared by extracting the essential oil components contained in the cypress tree using the essential oil extraction pressure device described in Korean Patent Registration No. 10-0828927, and the extraction time is appropriate for 3 to 9 hours. The reason is that if the extraction time is less than 3 hours, sufficient cypress essential oil with utility value cannot be extracted as much as possible, and its functionality deteriorates. And from the viewpoint of functionality, preferably 7 hours is appropriate.
Cypress essential oil produced through the above process is a terpene-based organic compound, which is a natural substance rather than a chemical substance. As a result of a joint experiment between the Forestry Research Institute and the Animal Medicine Research Institute of Chungbuk National University, it proves that cypress essential oil is a substance that does not have to worry about its safety at all if it is inhaled by diluting or volatilizing it.
In addition, cypress essential oil has strong antibacterial activity. As a result of experiments by the Forestry Research Institute, the antibacterial properties of cypress essential oil are similar to or higher than that of copper sulfate used as a raw material for pesticides. It has been found that the acid bacteria effect is also very excellent, and more importantly, cypress essential oil has a strong antibacterial action, but unlike the existing antibiotics, it is not resistant.
Cypress essential oil contains a large amount of phytoncide. Phytoncide relieves stress by reducing cortisol, a stress hormone.
If the content of cypress essential oil exhibiting the above-mentioned efficacy is less than 1 part by weight, the above effect is insignificant. It may decrease the taste of rice cake.

The spicy grinding step (S301) is a step of soaking and grinding spicy rice in water, after washing the spicy rice, soaking in water for 12 to 15 hours, and removing water for 40 to 80 minutes, to a particle size of 2 to 3 millimeters It is made by pulverizing, more specifically, washing the spicy rice with purified water 10 times or more until clear water is better, soaking the washed spicy rice in water for 12 to 15 hours so that it is crushed when pressed by hand, and draining the soaked spicy rice through a sieve It is a step of removing water for 40 to 80 minutes and pulverizing it to a particle size of 2 to 3 millimeters using a dolora.
Since the acorn boiling step (S301-1) is the same as described above, a description thereof will be omitted.
The first mixture grinding step (S303) is a step of mixing and pulverizing the acorns and salt boiled through the acorn boiling step (S301-1) with the spicy rice crushed through the spicy rice grinding step (S301) and grinding, the spicy rice grinding 30 to 45 parts by weight of the acorns boiled through the acorn boiling step (S301-1) and 1 to 2 parts by weight of salt are mixed with 100 parts by weight of the spicy rice pulverized through step (S301), and 0.5 to 1.5 milliliters using Dolora It is made by pulverizing to a particle size of meat.
After the first mixture crushing step (S303), the spicy rice crushed through the spicy rice crushing step (S301) and the acorns boiled through the acorn boiling step (S301-1) are evenly mixed, and the particle size is high. Thus, the steaming effect may be improved in the steaming step (S307).
The second mixture pulverizing step (S305) is a step of mixing and pulverizing the mixture pulverized through the first mixture pulverizing step (S303), and the first mixture pulverizing step (S303) is contained in the pulverized mixture It is made by mixing 15 to 20 parts by weight of water with respect to 100 parts by weight of the glutinous rice and pulverizing it to a particle size of 0.5 to 1.5 millimeters using Dolora.
At this time, in the second mixture grinding step (S305), in addition to the water, 1 to 2 parts by weight of cypress essential oil may be further mixed compared to 100 parts by weight of spicy rice contained in the pulverized mixture. It enhances one's immune function, relieves stress, and provides rice cakes that do not deteriorate for a long time.
At this time, since the description of the critical significance according to the manufacturing method and content of the cypress essential oil is the same as that described above, a description thereof will be omitted.
The steaming step (S307) is a step of steaming the mixture pulverized through the second mixture pulverizing step (S305), and the process of steaming the pulverized mixture through the second mixture pulverizing step (S305) for 15 to 20 minutes. When described in detail, take out the steamer, pour water, boil, prepare wet cotton cloth in the steamer, and when water boils in the steamer and steam starts to rise, the mixture pulverized through the second mixture grinding step (S305) It consists of a process of placing the noodles in a cloth, making steam holes in some places, covering the steamer, and steaming it for 15 to 20 minutes over medium heat.
If the time of the steaming step (S307) is less than 15 minutes, the steaming of the mixture pulverized through the second mixture crushing step (S305) does not proceed properly, and when the time of the steaming step (S307) exceeds 30 minutes Even after the steaming of the stirred mixture is completed through the second mixture grinding step (S305), the steaming continues, which is not preferable in terms of energy consumption or manufacturing cost.
The forming step (S309) is a step of putting the mixture steamed through the steaming step (S307) into a rice cake manufacturing apparatus and extracting it in the form of a rice cake. It is desirable to apply the conditions that apply.
